Ingredients of Mutton parda biryani:
For cooking meat:
- Matton 1 kg
- Ghee ¼ cup
- Garlic paste 1 tsp
- Cumin powder 1 tsp
- Ginger paste 1 tsp
- Almond paste 1 tsp
- Sugar 1 tbsp
- Yogurt 2 tbsp
- Coriander powder 2 tsp
- Cardamom 4-5
- Cinnamon 2 stick
- Bay leaves 1
- Black pepper 5-6
- Chopped onion 1 cup
- Like salt to taste
- Basmati or polao rice 2 cup
- Ghee 1 tbsp
- Milk ½ cup
- Sugar 1 tsp
- Water 4 cup
- Salt to taste
For the bread yeast:
- Flour 2 cup
- Salt 1 tsp
- Yeast 2 tsp
- Oil 1 tsp
- Sugar 2 tsp
- Lukewarm milk ¼ cup
- Amount of lukewarm water
- Egg 1
- Sesame wants
- Cut the mutton into large pieces and wash it well.
- Add 1 tbsp of salt and water to it. The amount of water will be such that the mutton is submerged.
- Now mix the mutton well with salt.
- Soak the meat in this saltwater for 1 hour.
- Due to this soaking, the mutton will be soft and the salt will penetrate well into it.
- After 1 hour drain the saltwater well.
- Now wipe the meat in a kitchen towel so that it dries out if there is excess water.
- Take meat in a bowl.
- Marinate the meat for 20 minutes with all of the mutton ingredients.
- Heat the oil in a pan and add the marinated meat to it.
- Cook on medium heat with the marinated meat.
- When it is cooked, finally add onion and raw chili and simmer for 15 minutes.
- Now for cooking polao, heat the ghee from polao ingredients.
- Fry the rice with whole spices.
- When the rice is fried, add twice the amount of water.
- Then add milk, salt, and sugar.
- Then cover and cook the polao.
- For making bread dough, mix all the ingredients with flour and make yeast.
- Then, in a warm place, cover and let the dough swell for an hour.
- When the dough swells, take a thick loaf of bread like pizza.
- First, take a round bowl of your choice and brush it with oil.
- Then roll the bread in a bowl and spread the rice, meat on it and layer in it.
- At the same time Spread the almond on top of it
- .When it is equal to the bowl, lightly press it and cover with bread.
- Brush the oil in the pan in which you will bake.
- Now gently turn the bowl of bread like pudding in the pan.
- Brush the egg on top.
- Bake for 15–20 minutes at 180 degrees Celsius, sprinkled with sesame seeds.
